Football Hall-of-Famer Partners with Brookfield’s Elbow Room

The former professional football player and Hall of Fame inductee Joe Thomas has partnered with one of Brookfield’s favorite local eateries, The Elbow Room.

In 2023, Joe Thomas was inducted into the Pro Football Hall of Fame earning special recognition for his work as an offensive lineman and ten consecutive Pro Bowl selections. However, Thomas had other aspirations, and in 2012, he found the perfect farm to start creating his premium beef farm.

His company, Hall of Fame Beef and Six Springs Farm, offers high quality, sustainable meats under three product lines: 100 percent full blood Waygu, F1 American Waygu, and premium Angus.

Now, Hall of Fame Beef and Six Springs Farm have partnered with the Elbow Room to serve their beef. The restaurant will now feature an exclusive Waygu blend for their burger patties, both at their Brookfield and Cedarburg locations.

Thomas’s passion for Wisconsin and good farming conditions comes from his childhood. The future football legend grew up in the suburbs of Milwaukee, attending high school at Brookfield Central, and would eventually go to college at UW-Madison. From 2003 to 2006, he built an incredible football career, winning the Outland Trophy, earning unanimous All American status, and becoming a College Football Hall of Fame inductee. Thomas stuck to his roots, eyeing up land in Wisconin’s Driftless area.

“Surrounded by open fields and rolling hills, I was amazed by a beauty I hadn’t known existed so close to home. I promised myself that if I ever owned land, it would be there,” he stated.

After finding NFL success with the Cleveland Browns, where he was known for playing over 10,000 consecutive snaps, he moved back near the Madison area, proving his love for Wisconsin. He played 11 seasons with the Browns, ending his career in 2018.

Thomas’s beef company is just another way for him to show his dedication to excellence. “We decided to name it “Hall of Fame Beef” because The Hall of Fame is the pinnacle of any sporting or entertainment career,” he has stated. “It’s the best of the best. Our hope is when you get an opportunity to eat this beef, you’ll realize it lives up to the name.”
