The Wisconsin State Fair has earned a national reputation for its food. From the cream puff to the countless ways of putting a spin on a bratwurst, the fair’s food never feels boring.
However, for those with dietary restrictions, navigating the fair can be difficult. At times, it can seem overwhelming to see rows of fried foods and sugary concoctions.
A Pewaukee bakery dedicated to serving gluten free items is helping fix that problem.
Molly’s Gluten Free Bakery ( Located at N47W28270 Lynndale Road, Pewaukee) has spent the past twenty years creating baked goods that are all gluten free. At their store at the Lynndale Farm, they sell a little bit of everything, including bread, pizzas, cookies, cakes, cupcakes, brownies, and pies.
Molly’s was originally established in 2005, then was purchased 3 years later by another owner who was passionate about baking delicious gluten free products. In late 2023, the business once again changed ownership, this time falling into the hands of Heather Smith.
Smith, her family, and her team of skilled bakers have worked hard to maintain Molly’s reputation for tastiness while also expanding their menu and their availability. Items such as a key lime pie and a danish Kringle have been added to the menu under their leadership.
Molly’s has added shipping options for their products as well as making appearances at several nearby farmers markets in order to expand the accessibility of their products.
This year, Molly’s will also be at the 2025 Wisconsin State Fair inside of the Expo Building.
Between July 31 and August 10, Molly’s will be selling some of their beloved cookies to fair attendees. They will have their campfire cookies (large and buckets), lemon cookies, and frosted sugar cookies (which are also dairy free).
Each year after the fair, they sell gluten free cream puffs for the week after its close. Those seeking out a phenomenal – but gluten friendly- take on the famous Wisconsin treat are encouraged to stop by the Pewaukee shop to pick them up after the fair ends.
Over the past few years, there has been a rising number of people with dietary restrictions against gluten. Molly’s is there to show how a local shop can help make the state fair a little sweeter in the midst of some culinary craziness.
