Ingredients:

  • 1 large butternut squash, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream (optional)
  • Salt, pepper, and a pinch of nutmeg

Directions:

  1. Sauté onion and garlic in a pot until fragrant.
  2. Add squash and broth; bring to a boil.
